做法:春笋切成片后加少许盐(yán )捞出(chū )后用清水浸泡(pào ),生(shēng )姜(jiāng )切片,葱切(qiē )成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水(shuǐ )半掩住春笋,盖(gài )上锅(guō )盖(gài )大(dà )火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅盖焖(mèn )。
