做(zuò )法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬(áo )干的时候加入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖(gài )焖(mèn )。
