做法:洗(xǐ )净宰好鲫鱼,洗净(jìng )淮(huái )山和薏(yì )米。用清(qīng )水把(bǎ )陈皮泡软,拍裂一小块姜,热锅,用姜块在锅(guō )上擦一遍,放(fàng )两勺(sháo )油,待油(yóu )六成热下(xià )鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里的(de )清水,放入煎煮好的鲫鱼和其他(tā )材料,武(wǔ )火(huǒ )煮沸,转中小火煲一(yī )个半小时,下盐调味即可品尝。
