做法:洗净宰好鲫鱼,洗(xǐ )净淮山(shān )和薏(yì )米。用清水把(bǎ )陈(chén )皮泡软,拍裂一小块姜,热锅,用姜块在锅上擦一遍,放两勺油(yóu ),待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清(qīng )水,放(fàng )入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武火(huǒ )煮沸,转中小火煲一(yī )个(gè )半小时(shí ),下盐调味即可品(pǐn )尝。
