做法:春(chūn )笋切成片后(hòu )加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水半(bàn )掩住春笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖(gài )上锅(guō )盖焖。
