做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清水浸泡(pào ),生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上(shàng )锅盖焖。
