做法:洗净宰好鲫鱼,洗净淮山和薏米。用(yòng )清水把(bǎ )陈皮(pí )泡软,拍裂一小块姜,热锅(guō ),用姜块在锅上(shàng )擦一遍,放两勺油,待(dài )油六成热下鱼(yú ),煎至微黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎(jiān )煮好的鲫鱼(yú )和(hé )其他(tā )材(cái )料,武火煮沸,转中小火煲(bāo )一个半小时,下盐调味即可品(pǐn )尝。
