做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡(pào ),生姜切(qiē )片,葱(cōng )切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均(jun1 )匀,加入(rù )少量清水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖上锅盖(gài )焖。
