做(zuò )法:春笋(sǔn )切成片(piàn )后加少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入(rù )2勺油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
