做法(fǎ ):春笋切成片(piàn )后加少(shǎo )许盐捞(lāo )出后(hòu )用清水(shuǐ )浸(jìn )泡,生姜切(qiē )片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量(liàng )清(qīng )水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
