做法:洗净宰好鲫鱼(yú ),洗净淮山和(hé )薏米。用清(qīng )水(shuǐ )把陈皮(pí )泡软,拍裂一(yī )小(xiǎo )块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和其他(tā )材(cái )料(liào ),武火煮沸,转中小(xiǎo )火(huǒ )煲(bāo )一个(gè )半小时,下盐调味即可品尝。
