做法:洗(xǐ )净(jìng )宰好鲫(jì )鱼,洗净淮山和薏米。用清(qīng )水把(bǎ )陈皮泡软,拍裂(liè )一小(xiǎo )块(kuài )姜,热锅,用姜(jiāng )块在锅上擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至(zhì )微黄。煮沸(fèi )瓦煲里的清水,放入(rù )煎煮好的鲫鱼和(hé )其他材料,武火煮沸,转中小火煲一(yī )个半小时,下盐(yán )调味即可品尝。
