做(zuò )法:春笋切成片后加(jiā )少(shǎo )许盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油(yóu ),放入(rù )生姜、春(chūn )笋(sǔn )、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅(guō )盖焖。
