做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀(yún ),加(jiā )入(rù )少量清水半掩住春笋,盖上锅盖大火(huǒ )煮(zhǔ )开后(hòu )转中火。煮到(dào )水快(kuài )熬干的时(shí )候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
