做(zuò )法:洗净宰好鲫(jì )鱼,洗净(jìng )淮山和薏米。用清水把陈(chén )皮泡(pào )软,拍裂一小(xiǎo )块姜,热锅,用(yòng )姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至(zhì )微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼(yú )和其他材料,武火(huǒ )煮沸,转中(zhōng )小火(huǒ )煲一(yī )个半小(xiǎo )时,下盐调味即可品尝。
