做法:洗净宰好鲫(jì )鱼,洗净淮山和(hé )薏米(mǐ )。用(yòng )清水把陈皮泡软,拍(pāi )裂一小块姜(jiāng ),热锅,用姜块在锅上擦一遍,放(fàng )两勺油,待油(yóu )六成热下(xià )鱼,煎至微黄。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎(jiān )煮好的鲫鱼和(hé )其(qí )他材(cái )料,武火煮沸,转中小火煲一个半(bàn )小时,下盐调味即可品尝。
