做法:洗净宰好鲫鱼,洗净淮山和(hé )薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅(guō ),用姜(jiāng )块(kuài )在锅上擦一遍,放两(liǎng )勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲(bāo )里的清水,放入煎(jiān )煮好的鲫鱼(yú )和(hé )其他(tā )材料,武(wǔ )火(huǒ )煮沸,转中小火煲一(yī )个半小时(shí ),下盐调味即(jí )可品尝。
