做法:春笋切(qiē )成(chéng )片后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入(rù )生抽、老抽(chōu )、蚝(háo )油翻炒均匀(yún ),加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖(mèn )。
