做法:春笋切成片后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉片、葱段翻(fān )炒(chǎo )1分钟(zhōng )左右。再(zài )加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁(zhī )时盖上锅盖焖。
