做法(fǎ ):春笋切成片后加少许盐捞(lāo )出后用(yòng )清(qīng )水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩(yǎn )住春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时候加入盐(yán ),翻炒均(jun1 )匀稍收汁时(shí )盖上(shàng )锅盖焖。
