做法:洗(xǐ )净宰好(hǎo )鲫(jì )鱼,洗净淮山和薏(yì )米。用清水把(bǎ )陈皮(pí )泡软,拍裂一小(xiǎo )块(kuài )姜,热锅,用姜块在锅上擦一遍(biàn ),放两(liǎng )勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里(lǐ )的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小(xiǎo )时,下盐调味即可品(pǐn )尝。
