做法:春笋切成片后加少许盐捞(lāo )出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住(zhù )春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅盖焖(mèn )。
