做法:洗净宰好鲫(jì )鱼,洗净淮山和(hé )薏(yì )米。用清水把陈皮(pí )泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦(cā )一遍,放两勺(sháo )油,待油六成热(rè )下鱼,煎至(zhì )微黄(huáng )。煮(zhǔ )沸瓦煲里的清(qīng )水,放入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转(zhuǎn )中(zhōng )小火煲一个(gè )半小时,下盐调味即可品尝。
