做(zuò )法:春笋切成片后加少许盐捞出后(hòu )用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入(rù )少量(liàng )清水半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖(gài )焖(mèn )。
