做法:洗净(jìng )宰好鲫鱼,洗净淮山和(hé )薏米。用(yòng )清水把陈皮泡软,拍裂一小(xiǎo )块(kuài )姜,热锅,用(yòng )姜块在(zài )锅(guō )上擦一遍,放两勺油(yóu ),待油六成热下鱼,煎至(zhì )微(wēi )黄。煮(zhǔ )沸瓦(wǎ )煲里的清水,放入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转中小火煲(bāo )一个半(bàn )小时,下盐调味即可品尝。
