做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成(chéng )段。锅(guō )烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒(chǎo )均匀(yún ),加入(rù )少量清水(shuǐ )半掩住春(chūn )笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖(gài )上锅盖(gài )焖。
