做法:春笋切(qiē )成片后加少许盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春(chūn )笋(sǔn )、牛肉片(piàn )、葱段翻(fān )炒1分钟(zhōng )左右。再加(jiā )入(rù )生抽(chōu )、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水半(bàn )掩住春笋,盖上锅盖大(dà )火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
