做法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱(cōng )段翻炒1分钟左右。再(zài )加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
