做法:洗(xǐ )净宰好鲫鱼,洗净淮(huái )山(shān )和薏(yì )米。用清水把(bǎ )陈皮泡软,拍裂一(yī )小块姜,热(rè )锅(guō ),用姜块在锅上擦(cā )一遍,放两勺油,待油六成热下(xià )鱼(yú ),煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材(cái )料,武(wǔ )火煮沸,转中小火煲一个(gè )半小时(shí ),下(xià )盐调味即可品尝。
