做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用(yòng )清水把(bǎ )陈(chén )皮泡软,拍裂一小块姜,热锅,用姜块在锅上擦(cā )一遍,放两勺(sháo )油,待油六(liù )成热下(xià )鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中小火煲一(yī )个半(bàn )小(xiǎo )时,下(xià )盐调味即可品尝。
