做法:洗净宰好鲫(jì )鱼,洗(xǐ )净淮山(shān )和(hé )薏(yì )米。用清(qīng )水把陈皮泡软,拍裂一(yī )小块姜,热锅,用(yòng )姜块在锅上擦一遍,放(fàng )两(liǎng )勺油,待油六成热(rè )下鱼,煎至微黄(huáng )。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小(xiǎo )火煲一个半小时,下盐(yán )调味即可品尝。
